Ahead of the exciting Autumn Nations Series coming this November, we’re pleased to announce a new collaboration with Michelin Star chef Tommy Banks, in our premium East Wing facility. Tommy currently heads up the Michelin-starred, 4 AA Rosette Black Swan restaurant in York; the talented chef became Britain’s youngest Michelin-starred chef in 2013 before winning Great British Menu in 2016 and 2017.
We caught up with Tommy and dug a little deeper about what we can expect from him later in the year. Get the inside scoop as we tasked Ugo Monye, our England Rugby Hospitality’s brand ambassador, to find out more…
So, when can you expect to see Tommy in The East Wing?
Tommy will be heading up the kitchen for the fixture against the current World Champions South Africa and will then return for the Calcutta Cup against Scotland in February. When called up about this exciting opportunity, Tommy just couldn’t refuse! Tommy’s a massive rugby fan and he’s extremely excited to get stuck in to provide an unforgettable experience for our guests.
Tommy: “There’s something about test matches that’s so special and to be able to be here is something I won’t forget.”
What can you expect from Tommy in the East Wing?
Tommy expressed his love of fresh local ingredients, explaining why The Black Swan has its own farm to grow absolutely everything themselves. He said In the East Wing you’d expect to have the same and be served nothing but the best – Tommy vows to do just that!
We asked Tommy if he can give us any teasers for the menu too…
“We have an amazing starter of spruce cured salmon, that gives a gorgeous pink grapefruit and citrusy flavour to the fish. Then the main course is a beautiful barrel fillet of Yorkshire Beef, cooked on the chargrill. This will be served with black garlic, ox cheek suet dumpling and mushrooms. To finish, a perfect chocolate number!”
“For the Post Match Twickenham Tea, we will be serving some sumptuous sausage rolls, Herdwig Lamb pies and some cookies that will hopefully soak up some of the days festivities.”

“Absolutely blown away, The East Wing is the most amazing fine dining restaurant but then the views of the hallowed turf are just incredible.” There you have it folks, you can’t argue with that!
