Tom Booton unveiled as the new chef in The East Wing

Keith Prowse is delighted to announce the partnership with chef Tom Booton in The East Wing for both the upcoming New Zealand and France fixtures.

 

Tom Booton is a talented young chef who has reached extraordinary culinary heights at such a young age. At just 26, Booton became head chef of The Grill at the Dorchester back in 2019, making him the youngest ever head chef in the restaurant’s 88-year history. Given the the level of skill and ability Tom had at the time, it’ no wonder he was given such responsibility. Tom’s recognition in the culinary world is ever expanding, and impressively he was voted the Chef to Watch 2021 in the prestigious National Restaurant Awards.

 

 

 

In a recent interview Tom speaks about the menu he is producing for the upcoming fixtures. A crispy sweetbread, which Tom assures us “everyone will love”. A satisfying beef fillet paired with a Guinness mayonnaise, a punchy Guinness flavour cutting through the dish. Followed by a braised Guinness hotpot with braised meat and potatoes. Tom is not only creating four exquisite courses before the game, he will also be creating a selection of half time and after match snacks which are sure to satisfy your post-match hunger. A hearty, satisfying meal which is a perfectly paired with a cold winters fixture. 

 

Tom has often praised chef Ian Rhodes of Le Talbooth, for teaching him the skills which have played a big influence on his style, helping shape and influencer his career. Tom has vast experience through working in different restaurants and styles of cooking around the world, shaping his own unique style.

 

Sustainability is always a focal point of the dish’s Tom produces, through sourcing the most local ingredients. Having a benefit to the environment and providing trade for local producers such as the vegetables sourced in Tom’s home county of Essex. This freshness shines through in the flavours of Tom’s dishes with his focus on ‘simply plated, precise plates of food using beautiful ingredients’.

The announcement of Tom’s culinary skills being showcased at Twickenham is exciting for sports fans and food lovers alike. We look forward to welcoming guests through the doors to experience a combination of Tom’s delightful food and exciting entertainment, both during the Autumn Nations Series and the Guinness Six Nations.
